Non-targeted analysis – Beginning of a new era?

Is my olive oil really from Italy? Or does my honey contain any sugar syrup? Or my paprika any colorants? In the past, so-called targeted analyses were used to answer these questions. Targeted means, that only one or few parameters of known identity, i.e. a known substance like a sudan dye, was analyzed. The drawback of this approach is, that you can only detect the substance that you are targeting. If that substance is not present in your sample but maybe other substances that point to some kind of adulteration do occur, then you won’t be able to detect those unless you are specifically searching for them. That is why…

Malolactic & Biogenic Amines: Organoleptic alterations of wine

Malolactic Fermentation (MLF) is the result of the metabolic activity of lactic bacteria present in wine which perform an enzymatic decarboxylation of malic acid into lactic acid and carbon dioxide. The lactic bacteria involved belong to four genera: Oenococcus, Leuconostoc, Lactobacillus and Pediococcus. The products of MLF include lactic acid and subsequently molecules which describe the scent of butter, yogurt and hazelnut. MLF can be metabolically divided into three very specific phases: Cell development: the bacterium begins to develop 1st phase: the bacterium uses malic acid transforming it into lactic acid 2nd phase: the bacteria use citric acid as an energy source, producing diacetyl The chemical-physical parameters that regulate the…

Minerva Scientific introduces matrine and oxymatrine testing of honey

There have been four EU RASSF alerts concerning detectable levels of the pesticides oxymatrine and matrine in Chinese honey within the past 12 months, with most of these alerts relating specifically to Chinese Acacia honey. There was also a product recall of retail Acacia honey containing ‘high’ levels of oxymatrine in France in August last year. Matrine and oxymatrine are both commercially available as pesticide formulations with wide-ranging properties. The compounds are naturally occurring plant alkaloids also known to be present in significant concentrations in the flowers and other plant material of Sophora flavescens, a shrub-like tree growing extensively in some regions of China. The trees are reported to be…

Fumigants – more of a curse than a blessing? Are there alternatives?

The use of ethylene oxide in cereal products and spices repeatedly leads to massive recalls in the international trade. Due to the strict requirements regarding phytosanitary import controls, fumigants are currently the only effective alternative to prevent the introduction and spread of pests from importing countries. Thus, fumigation of containers for shipment, as well as fumigation of warehouses is a common practice. The fumigants methyl bromide, ethylene oxide and phosphine are primarily used because of their effectiveness in pest control. The use of methyl bromide as a fumigant has no longer been permitted in the EU since 2010. The use of ethylene oxide is also only possible to a limited…
